Sun dried tomato, basil and garlic are the star players in this simple-to-make, flavorful dressing.
I originally made this dressing to mix into a Summer Quinoa Salad and the next day found myself making it again to serve over a pile of greens. It’s great to find simple, homemade dressings to enjoy rather than toxic, bottled salad dressings. This dressing is perfect if you love sun dried tomatoes, basil and garlic as much as I do.
Here’s a list of other homemade dressings I’ve dabbled with:
4 sun dried tomato halves (not in oil)
1½ tablespoons Balsamic Vinegar
1½ tablespoons white wine vinegar
½ teaspoon crushed Garlic
¼ teaspoon sea salt
¼ cup olive oil
1 tablespoon fresh basil, minced
Place the sun dried tomatoes in a small pot and cover with an inch of water. Simmer for 3 minutes, until the water is reduced and the tomatoes are plump. Drain and (once cooled) mince the tomatoes.
Combine the minced tomatoes with the remaining ingredients and mix well. Serve over greens or mix into cooked quinoa. Enjoy!
