This Key Lime Pie is light, tangy, and refreshing. Serve it up chilled with a dollop of Whipped Coconut Cream. Yes, please!
Note: Emotional eating temporarily relieves distress . . . and then makes it impossible to achieve what you really want. Part of your real food journey is learning how to have a healthy relationship with food by not using food as a solution to emotional pain. It’s easier said than done, my friend, but it is possible. Having a slice of Key Lime Pie with our friends and family as we celebrate life is a whole different animal than eating an entire pie alone because our heart hurts. Eat to celebrate life, not to escape it.
6 limes
2 egg yolks
Combine 1 tablespoon lime zest, 1⁄2 cup lime juice, the egg yolks, and the Sweetened Condensed Coconut Milk in a food processor. Blend until smooth.
Pour the mixture into a Graham Crust. Bake for 15 minutes. Cool and chill for 60 minutes. Serve with Whipped Coconut Cream. Enjoy!
