Here’s a more wholesome alternative to traditional, store bought sweetened condensed milk. It’s quite simple to make, just takes a little patience as you stir, stir, stir, stir.
Note: How should you use this Sweetened Condensed Coconut Milk? Hmmm, let me count the ways:
1. Make Key Lime Pie.
2. Add a spoonful to your morning coffee.
3. Dip your Pretzel Bites in it
4. Spread some over a piece of Almond Bread.
5. Put some in your hair . . . ? Maybe not.
2 cans (13.66oz) coconut milk, full fat
⅓ cup raw honey
Chill the cans of coconut milk in the fridge overnight. Do NOT shake the cans up at all! Ever! Carefully turn the cans over and open from the bottom. Drain out the liquid and scoop the white cream into a bowl. Discard the liquid.
Combine the coconut cream and honey in a skillet. Place over low heat. Cook and stir as the cream and honey melt.
Use a whisk to gently stir. Cook for about 40 minutes, stirring often. The mixture will reduce by half to become thick. Store in an airtight container in the fridge and use in a tasty dessert. Enjoy!
