I’m a sucker for a big, indulgent breakfast. The bigger and more indulgent the better.
Pancakes are usually my go-to, simply because it’s quicker for me to pull out the pancake griddle than it is to go outside to the storage room behind the garage to poke around for my Belgian waffle maker. This waffle contraption is such a space hog that I can’t justify keeping it in the kitchen – lol! But in all honesty, I really believe that waffles taste better, and are more indulgent, than pancakes.
Grain-free waffles can be a challenge compared with traditional waffle mixes, when it comes to having batter want to stick, so always be sure to take the extra time to grease your waffle maker with some coconut oil. It’s worth it when your waffles quickly pop out in one piece.
I’ve already posted 3 awesome waffle recipes (Waffles with Tropical Fruit Topping, Gingerbread Waffles, and Chocolate Waffles), but this is the first one that is 100% nut-free as well as being free of grains and gluten. So high-five to all my nut-free friends! This one is for you
8 slices Nitrate free bacon
2 tablespoons coconut sugar
8 eggs
½ cup coconut oil, melted
½ cup coconut flour
¼ teaspoon sea salt
¼ teaspoon baking soda
¼ - ⅓ cup coconut milk, canned and full-fat
2 tablespoons coconut sugar
1 teaspoon vanilla extract
Preheat the oven to 375 degrees F. Line a rimmed baking sheet with foil. Lay the bacon pieces over the foil and sprinkle with the coconut sugar. Bake for 15-20 minutes, until crispy. Once cooled, mince.
Preheat your waffle maker and grease with coconut oil.
Combine all of the waffle ingredients in a food processor or high speed blender. Mix in the bacon pieces. Cook in the prepared waffle maker according to the manufacturer’s directions. Serve with fresh fruit and a drizzle of pure maple syrup. Enjoy!
