Have you noticed how stores are putting out the Christmas stuff and playing those holiday tunes earlier and earlier each year? I saw Santa decorations a few weeks before Halloween this year…so it’s no wonder that it feels like tomorrow should be Christmas rather than Thanksgiving. I’m all holiday-confused now!
We always eat these gluten-free waffles on Christmas morning, after opening gifts. They are soft and spiced, the perfect thing to eat when you want to feel festive and happy. It’s a bonus that the recipe contains zero grains and zero cane sugar.
Hopefully the kids don’t get too confused when I serve them Christmas waffles the day before Thanksgiving…Give these waffles a try and let me know what you think. Enjoy!
- In a medium bowl combine the almond flour, coconut flour, spices, baking soda and salt.
- In another bowl beat the eggs, add the syrup, coconut milk, vanilla extract and molasses. Add the egg mixture all at once to the flour mixture. Stir just until moistened.
- Cook the batter in a preheated, greased waffle maker according to the manufacturer’s directions. Serve warm with pure maple syrup. Enjoy!
