If you haven’t tried cauliflower rice yet, you’re in for a major treat.

It’s basically a low calorie, low carb, high fiber replacement for traditional rice.

Serve your main meat dish on it and add a green salad for a perfect, healthy meal.

I’m having lots of fun coming up with new versions of cauliflower rice. It all started with the basic Real Healthy Rice which goes great with any meal. Then came the delicious Real Healthy Fried Rice for Asian themed dinners.

This latest recipe for Real Healthy Sweet & Sour Rice is perfect for tropical inspired meals. I love the addition of sweet pineapples!

Serves 8

1 head cauliflower

1 tablespoon coconut oil

2 cloves Garlic

1 teaspoon fresh ginger, grated

1 red onion, minced

¼ cup coconut milk, full fat

1 cup fresh pineapple, cut into small pieces

1 tablespoon coconut aminos

½ teaspoon ground allspice

salt and pepper to taste


Wash the cauliflower and cut into small florets. Run through the food processor with the grating blade. Set the grated cauliflower aside.


In a large skillet, place the coconut oil over medium high heat. Add the garlic, ginger, onion and green pepper. Sauté until tender, about 5 minutes.


Add the grated cauliflower to the skillet, mixing well. Add the coconut milk, pineapple, coconut aminos, allspice, salt and pepper. Sauté for 10-15 minutes longer.


Serve while warm or chill in the fridge before serving.
