I love baked goods and sweet things…probably a little too much! There’s such joy and comfort when the house is filled with the aroma of sweet things baking.
This recipe for Low Carb Passion Fruit Loaf is my way of making sweet bread without the guilt. It’s also a wonderful way to use fresh passion fruit pulp, which I have a lot of lately! The protein powder adds sweetness and enhanced vanilla flavor, while bringing a nice dose of quality protein. Spread some Roasted Fig Puree on a slice and you’ll be in summer fruit heaven
¾ cup vanilla protein powder
¼ cup flax meal
⅔ cup coconut flour
1 teaspoon baking soda
½ teaspoon sea salt
2 packets stevias
½ teaspoon ground cinnamon
½ cup filtered water
½ cup coconut oil
1 teaspoon apple cider vinegar
½ cup passion fruit pulp
4 eggs
Preheat the oven to 350 degrees F. Generously grease a loaf pan with coconut oil.
In a medium bowl combine the protein powder, flax meal, coconut flour, baking soda, salt, stevia and cinnamon. In another medium bowl combine the water, oil, vinegar, passion fruit and eggs.
Add the wet ingredients to the dry ones, mix until fully combined. Transfer the dough to prepared load pan, smooth out the top.
Bake for 40 minutes, until golden on the top and cooked through. Slice and enjoy warm!
