It’s important to let the crackers cool all the way before removing from the pan, in order to prevent crumbling. Also, keep the leftovers in the fridge to keep ’em fresh and intact (remember, coconut oil gets firm when chilled). These crackers taste best when freshly baked. Enjoy!
1 cup blanched almond flour
1 teaspoon sea salt
1 cup FANCY CHEESE BALL
3 tablespoons coconut oil, melted
2 tablespoons ice water
1 tablespoon coconut milk, full fat
Preheat the oven to 350°F. Cut out 2 large rectangles of parchment paper that fit on an 18 × 26-inch rimmed baking sheet.
Combine all the ingredients in the bowl of a food processor and pulse until a dough forms.
Place the dough ball between the 2 sheets of parchment paper and roll out to 1/8 inch thick. Transfer the parchment and dough to the baking sheet and remove the top layer of paper. Using a fluted pastry wheel, cut the dough into 1-inch squares and pierce the center of each square with a fork. Bake for 12–15 minutes, until golden.
