Who said that a fancy cheese ball has to contain dairy or soy? Nah! This tasty cheese ball is made with soaked and creamed cashews along with a bunch of tasty flavors. Serve with grain-free crackers!
Note: Before making this cheese ball. be sure to first soak the cashews in hot water for a couple of hours. This will ensure that your cheese is really creamy.
3 cups raw cashews, soaked in hot water for 2 hours
1 teaspoon sweet paprika
1 teaspoon ground turmeric
2 teaspoons sea salt
2 teaspoons onion powder
¼ cup sun-dried tomatoes, minced
½ cup nutritional yeast
1 teaspoon yellow mustard
2 tablespoons dry white wine
2 tablespoons apple cider vinegar
1 cup coconut oil, melted
½ cup sliced almonds
Drain the cashew soaking water and add the nuts to the bowl of a food processor. Add the remaining ingredients except for the almonds and blend until smooth. Transfer the mixture to the fridge to chill for 4 hours.
Divide the mixture in half and form each half into a ball. Roll both balls in the sliced almonds, wrap them each in plastic wrap, and return them to the fridge to chill until you’re ready to serve.
