​This recipe is SO MUCH FUN!

To be able to serve up a Cheeseburger Tater Tot Casserole that’s filled with such healthy ingredients and yet tastes so much like the real thing is an exciting experience! 

I always judge the success of my recipes on how much of it my kids eat. This recipe was demolished by the kids, to the point where only a tiny portion was leftover for B to try. He ate his tiny portion and then immediately requested that I make an entire casserole JUST FOR HIM! 

So I will be making this casserole again over the weekend :) I hope you enjoy this family dinner as much as we did! 


Serves 8

1 teaspoon olive oil

1 tablespoon minced garlic

½ cup yellow onion, chopped

¼ cup red bell pepper, chopped

1 pound lean ground beef, or Beyond Beef

½ teaspoon sea salt

½ teaspoon black pepper

2 teaspoons smoked paprika

1 teaspoon coconut sugar

¼ cup natural ketchup

2 tablespoons yellow mustard

1 cup Plain Greek Yogurt

½ cup fresh, organic Cheddar Cheese (Optional)

Topping

1 avocado, diced

1 Tomato, diced

2 tablespoons fresh chives

1 tablespoon lemon juice

sea salt and white pepper to taste

Spray a 9x13 casserole pan with non-stick spray. Preheat the oven to 350 degrees F.

In a large skillet over medium-high heat, add the olive oil and minced garlic. Add the onion and bell pepper and cook, stirring often, until tender, about 3 minutes. Add the ground beef and sprinkle on the salt, pepper, paprika and coconut sugar. Cook, stirring often, until browned. Remove from heat and drain the grease.

Mix in the ketchup, mustard and yogurt. Spread over the bottom of the prepared casserole pan. Top with the Cauliflower Tater Tots. Sprinkle with cheese (optional).

Bake in the preheated oven for 20 minutes until hot, bubbly and the cheese is melted. Combine the topping ingredients in a bowl and sprinkle over the top of the casserole. Serve immediately and enjoy!
