1 head Butter Lettuce
2 tablespoons olive oil
2 tablespoons sherry vinegar
1 tablespoon pure maple syrup
1 tablespoon whole grain mustard
4 slices thick-cut bacon, each cut into 8 pieces
1 large crisp apple, quartered and cored, each quarter cut into 4 pieces
sea salt and black pepper to taste
Wash and chop the butter lettuce and place in a large bowl.
Combine the oil, vinegar, syrup and mustard in a small bowl.
Cook the bacon in a skillet over medium heat until crisp, about 5 minutes. Transfer the cooked bacon pieces to a paper towel lined plate, pour off most of the bacon grease but leave a film covering the bottom of the skillet. Add the apple slices and cover the skillet. Cook undisturbed for 3 minutes.
Add the dressing to the skillet, swirl to cover the apples and cook for 2 minutes, until the dressing and apples are hot. Toss the apples, dressing and bacon pieces with the butter lettuce. Season with salt and pepper and serve immediately. Enjoy!
