Here’s a simple pudding recipe to love. It’s creamy and comforting and the perfect replacement for traditional pudding made with dairy and refined sugar. The first spoonful will have you smiling.
I could eat a huge bowl of this sweet vanilla pudding. (Notice the spoon in the photo? That’s me about to take a bite . . . ) Seriously, hold me back!
1 can (13.66oz) coconut milk, full fat
3 tablespoons raw honey
10 drops Liquid Stevia
pinch of sea salt
¼ teaspoon lemon juice
2 teaspoons vanilla extract
2 teaspoons powdered gelatin
4 teaspoons dark chocolate shavings
In a saucepan, combine the coconut milk, honey, stevia, salt, lemon juice, and vanilla over medium-low heat. Whisk continuously as the mixture warms, keeping it from boiling.
After 10 minutes, sprinkle the gelatin over the heated mixture so it can bloom and soften, about 5 minutes. Whisk the gelatin into the pudding and continue whisking over medium-low heat for 5 minutes, being careful not to let the mixture boil.
Divide the pudding among 4 bowls and place in the fridge to chill for 2 hours before serving. Garnish with the chocolate shavings.
