Oh what to do with those turkey leftovers?! I’m really not a fan of leftovers – it’s so much more exciting to start a new adventure with fresh ingredients…but wasting is not cool, so I like to find ways to make leftover turkey fresh, interesting and delicious. My grain-free Naan bread is tasty and sturdy enough for the foundation of a grain-free sandwich. Then we add in some homemade cranberry sauce, mashed avocados, crispy bacon, tart green apple and crunchy lettuce for leftover turkey sandwich that seriously satisfies!
2 slices Naan bread
½ avocado, mashed
2 tablespoons Coconut Sugar Cranberry Sauce
½ Green Apple, thinly sliced
2 crispy bacon strips
½ cup roasted turkey, chopped
a few lettuce leaves
Spread the avocado over one piece of Naan bread and the cranberry sauce over the other piece. Layer the rest of the sandwich ingredients between the two pieces of bread and slice in half. Enjoy!
