Here’s a light and airy taste of Hawaii that will please your sweet tooth and send you into a tropical daydream!

½ cup Swerve Confectioners Style
1 tablespoon Sweet Hawaiian Pineapple EveryDay Fit
2 tablespoons coconut flour
2 tablespoons Unsweetened Coconut Flakes
6 liquid egg whites
pinch of sea salt
½ teaspoon cream of tartar
12 pineapple rings
6 pitted cherries, halved
2 tablespoons brown Swerve
Preheat the oven to 300 degrees. Line cookie sheet with parchment paper.
Place the protein powder, powdered swerve, EVERYDAY FIT, coconut flour and flaked coconut in a food processor and pulse 6 times. Set aside.
With an electric mixer, beat the egg whites with the pinch of salt until soft peaks form. Add the cream of tartar and continue to beat until stiff peaks form. Quickly mix in the protein powder mixture.
Drop the fluffy dough in 12 mounds on the prepared cookie sheet. Garnish each cake with a pineapple ring, half a pitted cherry and a sprinkle of brown sugar swerve (or coconut sugar).
Bake in the preheated oven for 20 minutes. Remove from the oven and cool on the pan for 10 minutes. Enjoy!
