About

Do you know what traditional hot dogs are made of? This isn’t a horror book so I don’t want to be too graphic here. Let’s just say the words mechanically separated, blended meat, bone bits, corn syrup, high sodium, preservatives, chemicals, artificial colors, as well as artificial flavors are involved. Enough said.

Feel free to enjoy these wholesome, homemade hot dogs with peace of mind. These dogs are made with a combination of cooked ham with ground pork that gives it an authentic hot dog taste, all without the frightening ingredients of manufactured hot dogs. These dogs make a quick and easy weeknight dinner. Simply combine the ingredients, form into hot dogs and put in the oven for 35 minutes. It makes enough for dinner, and for lunch for the next day!

Note: If you’d like to use ground turkey or chicken, that works too.

Serves 6

2 eggs

½ cup yellow onion, minced

¼ cup flax meal

1 teaspoon dijon mustard

¼ teaspoon black pepper

12 ounces cooked ham, diced

12 ounces ground pork

1 avocado

1 red bell pepper

¼ cup fresh cilantro

2 Tomatoes

½ cup pico de gallo

CILANTRO DRESSING

FLUFFY EGG WHITE BISCUITS

Directions
1

Preheat the oven to 350 ̊F. Lightly grease a baking pan with coconut oil.

2

In a medium bowl, beat the eggs. Add the almond flour, flax meal, coconut milk, Dijon, and black pepper.

3

Pulse the ham in a food processor until finely ground.

4

Add the ground ham and ground pork to the bowl. Mix well. Don’t be afraid to use your hands! Form into hot dogs. Place on the prepared baking pan. Bake for 40 minutes, until cooked through.

5

Arrange the cooked hot dogs on Fluffy Egg White Biscuits, shaped into buns. Top with the fresh, chopped produce and drizzle with Cilantro Dressing. Enjoy!
