2 orange sweet potatoes, peeled and cut into thin rounds
2 purple sweet potatoes, peeled and cut into thin rounds
2 tablespoons olive oil
4 garlic clove, minced
¼ cup fresh thyme
½ teaspoon sea salt
Preheat the oven to 450 degrees F. Lightly grease a baking dish with olive oil.
In a large bowl combine all of the ingredients together. Toss until evenly coated.
Spread the sweet potato rounds onto the prepared baking dish in a single layer. Bake for 40 minutes, or until tender and golden.
