I finally made a salad that my kids will eat!!! At 5 and 3, Andrew and Chloe don’t want to have anything to do with big leafy salads that are too hard to chew. This strawberry microgreen salad is perfect– it’s sweet, has small easy-to-chew microgreens, and is peppered with sliced strawberries and candied walnuts.
If you’re in a hurry you can purchase pre-made strawberry salad dressing and packaged candied walnuts rather than making them.
3 cups Microgreens
1 cup Strawberry, sliced
¼ cup Candied Walnuts, chopped
6 strawberries
1 tablespoon Balsamic Vinegar
1 teaspoon raw honey
2 tablespoons olive oil
dash of sea salt
dash of black pepper
Blend; strawberries, balsamic vinegar, raw honey, olive oil, salt, and pepper.
Toss the microgreens with strawberries and dressing. Sprinkle with walnuts.
