2 strips crisped bacon
¼ cup fruit-only cherry preserves
¼ cup natural ketchup
2 tablespoons lime juice
1 Chipotle chile, canned in adobo sauce
½ teaspoon fresh thyme
¼ teaspoon ground cumin
4 (5 ounce) salmon fillets
sea salt and black pepper to taste
In a grill pan, crisp the bacon over medium-high heat. Remove the bacon from the skillet, leaving the bacon grease. Once cooled, mince the bacon.
Puree bacon with the remaining sauce ingredients in a high-speed blender until fully incorporated.
Season the fillets with sea salt and black pepper. Heat the grill pan over medium and place the flesh-side down, cooking for 5 minutes. Flip and cook for another 5 minutes, until the fish flakes easily. Spread the sauce over the top of each fillet and cook for another minute. Serve with any remaining sauce. Enjoy!
