This Simple Veggie Soup is a wholesome, delicious way to warm up and to lighten up after all that holiday eating.
Feel free to add some shredded or chopped, roasted chicken or turkey if you want to up the protein count. Enjoy!
1 tablespoon olive oil
3 cloves Garlic, minced
1 yellow onion, chopped
1 Butternut Squash, peeled, seeded and cubed
3 large carrots, sliced
2 stalks celery, sliced
2 medium zucchinis, sliced into half moons
1 red bell pepper, seeded and diced
6 cups chicken broth
2 tablespoons fresh thyme
2 bay leaves
sea salt and black pepper
In a large soup pot heat the olive oil over medium-high heat. Add the garlic and onion cook for 3 minutes. Add the squash, carrots and celery and cook for 5 minutes, stirring often. Add the zucchini and bell pepper and cook for 3 minutes.
Add the remaining ingredients and cover, simmering for 20 minutes. Remove the bay leaf, season with salt and pepper and serve warm. Enjoy!
