Here’s a crispy chicken comfort food recipe that won’t leave you feeling guilty.
Naturally sweet coconut flakes and crunchy sesame seeds make a delightful crust. No deep fryer needed!
This recipe is quick, so it’s great for week night dinners when you want to dress up skinless boneless chicken breast.
1½ pounds boneless, skinless chicken breast - cut into 1 inch squares
⅓ cup coconut milk, full fat
1 egg yolk
2 tablespoons dijon mustard
1 teaspoon sesame oil
Dash of salt and pepper
⅓ cup sesame seeds
¼ cup unsweetened shredded coconut
Preheat oven to 450 degrees F. Lightly grease a baking sheet with coconut oil.
In a medium bowl combine the coconut milk, egg yolk, Dijon, sesame oil, salt and pepper. Mix well then add the 1inch chicken pieces. Mix to coat.
On a plate, combine the sesame seeds and coconut shreds. Briefly place the chicken pieces on the plate, then sprinkle the tops with more of the sesame coconut mixture. Place on the prepared pan.
Bake for 20-22 minutes, then turn on the high broil for 1-3 minutes to toast the tops.
