This easy-to-make sausage has real, authentic sausage flavor without the chemicals and preservatives of store- bought sausage. I love adding little bursts of flavor to homemade sausage patties, like the roasted pepper in this recipe. Sometimes I get a little wild and add diced cooked apples. Serves 12

2 teaspoons sea salt

2 teaspoons black pepper

2 teaspoons Dried Oregano

2 teaspoons Dried Thyme

2 teaspoons ground sage

1 tablespoon ground fennel

½ teaspoon ground chili

2 tablespoons roasted red bell pepper, minced

2 pounds ground pork

1 tablespoon coconut oil


Directions

Combine all of the ingredients, except the coconut oil, in a large bowl. Mix well with your hands— but wash them first! Form 12 sausage patties.

Heat the coconut oil in a large skillet over medium high heat. Cook the sausages until browned on both sides. Enjoy!
