These Real Healthy Waffles with Tropical Fruit Topping are the perfect weekend indulgence that won’t leave you bloated and lethargic. Instead, this breakfast of champions will fill you with real food energy to power you through your active weekend.


Serves 8
For the Waffles:

4 eggs

2 tablespoons pure maple syrup

1 teaspoon vanilla extract

1 cup almond flour

1 tablespoon coconut flour

1 teaspoon baking soda

pinch of sea salt

¼ teaspoon ground cinnamon

Fruit Topping:

1 Mango, sliced

1 Banana, sliced

1 tangerine, halved


Directions

Preheat your waffle iron and lightly grease with coconut oil.

In a medium bowl combine the eggs, coconut milk, syrup and vanilla. Mix well.

In another medium bowl combine the almond flour, coconut flour, baking soda, salt and cinnamon.

Add the dry ingredients to the wet, whisk until the lumps disappear.

Prepare waffles according to the manufacturer’s directions.

In a medium bowl combine the sliced mango and banana. Squeeze the juice from the tangerine over the sliced fruit. Sprinkle with ground cinnamon and mix well.

Serve each waffle with a drizzle of pure maple syrup and a scoop of the tropical fruit topping.
