This summer will go down in history as “The Summer of The Real Healthy Ice Cream Sandwich”! I’m not sure how many batches of these yummy, frozen treats I made, but let’s just say it was nearly every week
In a bowl mix together the almond butter, vanilla extract, almond extract and ground cinnamon.
Slice 4 bananas in half lengthwise and crosswise. Cover each sliced banana with the almond butter mixture, press a wooden skewer between two pieces of banana to create 8 sandwiches. Freeze for 30 minutes.
Over low heat, melt the chocolate and oil together. Dip each frozen sandwich in the melted chocolate until fully coated. Return to the freezer for 10 minutes.
There you go, a quick and delish, real food ice cream sandwich! Enjoy!
