I love serving a little something pickled with dinner. Vinegar is a digestive aid and (more importantly) pickled accouterments just taste good!
This recipe for Quick Pickles is almost too easy. Simply slice cucumbers and onion, bring a vinegar mixture to a boil and then combine the two in the fridge for a few hours. The flavors of the pickles will intensify over several days and will stay good in the fridge for two weeks. Enjoy!
2 English cucumbers, thinly sliced half moons
1 small yellow onion, thinly sliced half moons
1 cup white wine vinegar
¼ teaspoon Liquid Stevia
½ cup water
2 tablespoons fresh tarragon, chopped
1 teaspoon sea salt
Place the cucumber and onion slices in a jar.
In a small pot over medium high heat bring the vinegar, stevia and water to a boil.
Pour the vinegar mixture into the jar. Mix in the tarragon and salt. Chill for at least 3 hours before serving. Keeps in the fridge for 2 weeks. Enjoy!
