Here’s a fun holiday recipe that puts a healthy spin on classic snowball cookies!
It is truly possible to have all the cookies you want this time of year without ruining your fitness results...this recipe is proof! By swapping out sugar for Swerve and flour for protein powder these cookies have all the flavor you crave with far better nutrition than you’d think.
Quick note about shaping the snowballs: You’re going to notice that the cookies flatten as they bake in the oven, and will come out looking nothing like snowballs. That’s A-OK! Give it 5 minutes to cool slightly, then pick up each cookie and smoosh it into a ball...yep just like you’d do with a handful of snow to turn it into a snowball. From here you’ll roll the snowballs in confectioners swerve, let it cool fully, then roll it again for even better powdery white coverage.
1 cup Butter or coconut oil
1½ cups Swerve Confectioners Style
2 teaspoons vanilla extract
1¼ cups blanched almond flour
½ teaspoon sea salt
1 cup pecans, toasted and chopped
Preheat the oven to 325 F. Line 2 baking sheets with parchment paper.
In a large bowl with an electric mixer, beat the butter until smooth, about 1 minute. Add ¾ cup of the confectioners Swerve until creamy, scraping down the sides as needed. Add in the vanilla extract, almond flour, sea salt and protein powder. Mix in the pecans until fully incorporated.
Chill the dough for 30 minutes. Place the remaining confectioners Swerve in a shallow bowl.
Roll 1 Tablespoon of dough per cookie and place on the prepared baking sheet 2-inches apart. Bake for 10 - 12 minutes in the preheated oven, until golden.
Allow the cookies to cool for 5 minutes, then squish into balls and roll in the confectioners Swerve. Place the cookies on a wire rack until fully cooled. Roll each cookie in the swerve one more time until fully coated and snowy white. Enjoy!
