The holidays are filled with opportunities to bake and share desserts, so I thought I’d come up with a shareable dessert recipe that EVERYONE will love that’s filled with WHOLESOME ingredients to fuel your fitness lifestyle. These dessert bars are soooooo tasty! 

A few things to note about this recipe so that you can make it tailored to YOUR needs and preferences:

1) Use a HIGH QUALITY, DELICIOUS protein powder to ensure that you get the BEST flavor in your dessert bars. This means making sure that your protein powder is made with CLEAN ingredients and void of artificial sweeteners and additives.

2) You could make this CRUSTLESS. Making this without the crust will reduce the calories, fat and carbs in this dish, so utilize that option if you’d like! 

3) I personally like it when pumpkin pie products are a little gooey, SO if you do too then reduce your bake time down to closer to 30 minutes. However, if you are doing this crustless then make sure to bake at least 40 minutes so that the bars stick together without the need for a crust. 


Serves 16
For the Crust:

3 cups Raw Pecans

½ teaspoon sea salt

1½ cups Pitted Date

6 Tablespoons coconut oil, melted

For the Filling:

2 large eggs

1 ½ cups plain Greek Yogurt (full fat or 2%)

1 (15oz) can pumpkin puree

 2 Tablespoons pumpkin spice

2 Tablespoons pure maple syrup OR ¼ teaspoon liquid stevia


Directions

Preheat the oven to 325 degrees. Line an 9x13 casserole pan with parchment paper and set aside.

For the Crust:

Combine all of the crust ingredients in a food processor. Blend until all of the ingredients are evenly incorporated.

Press the crust firmly and evenly onto the bottom of the prepared pan. Set aside.

For the Filling:

Combine all of the filling ingredients in a bowl and mix until well combined. Pour over the prepared crust and smooth out the top.

Bake on the lowest rack in the oven for 40 minutes. Remove from oven, allow to cool and then chill before cutting into bars. Enjoy!


Quick Tip

​This can TOTALLY be made in a pie pan if you’d prefer!
