I love this recipe as written, but here are a few modifications that you could make to suit your tastes:
Fruit Flavor: Feel free to use 1 cup of any fresh, chopped fruit. While I have passion fruit coming out of my ears right now, since my in-laws grow it by the bushel, you may not have access to any. No worries – use whatever fresh, organic fruit you have available to you.
Sweetness: While there’s zero added sugars in this tasty recipe, it does call for 2 bananas. This is a wonderful amount of sweet for most people and for serving to children, however if you’re really watching your natural sugars and carbs then this amount can be modified. Feel free to reduce to 1 banana, or to leave the bananas out completely and instead use stevia for sweetness. If you do take out both bananas then use 2 cans of drained coconut milk, rather than 1.
Protein: I added ½ cup of vanilla egg white protein powder, which was just enough to go undetected while adding a nice protein boost. Depending on your preference and protein needs, you could add more protein or take out the protein powder completely.

1 cup passion fruit pulp
1 can (13.66oz) coconut milk, full fat
1 teaspoon vanilla extract
2 Bananas, frozen and peeled
1 tablespoon coconut oil
¼ teaspoon almond extract
½ cup stevia-sweetened vanilla protein powder
Chill the can of coconut milk in the fridge overnight. Do NOT shake the can up at all! Carefully turn the can over and open from the bottom. Drain out the liquid and scoop the white cream into a food processor. Discard the liquid.
Throw all of the ingredients into a food processor. Blend on high until creamy. Enjoy chilled.
