Bacon in brownies? Have I LOST MY MIND?!?
Well, it’s not just any bacon, it’s smokey, maple baked bacon that’s chopped up into little salty-sweet morsels. Mmmmmmmmm
If you are a fan of bacon and also a fan of chocolate then this very well might be the most delicious thing you’ll ever eat. Seriously, it’s that amazing
4 sllices Nitrate free bacon
¼ cup pure maple syrup
2 tablespoons dijon mustard
2 eggs
1 tablespoon vanilla extract
¼ teaspoon almond extract
⅓ cup- ½ cup raw honey, melted
3½ ounces dark chocolate
¾ cup blanched almond flour
½ cup mini dairy-free soy-free chocolate chips
Preheat the oven to 400 degree F. Line a rimmed baking sheet with foil and place the bacon on the foil in a single layer. Combine the maple syrup (or honey) and Dijon in a small bowl and brush over the bacon. Bake for 20 minutes, or until fully cooked. Once cooled, chop the bacon into small pieces.
Change the oven temperature to 350 degrees F. Grease an 8×8 brownie pan with coconut oil.
In a medium bowl whisk the eggs. Add the vanilla and almond extracts. Add the raw honey, coconut oil and melted chocolate and mix well. Add the almond flour, chocolate chips and chopped bacon. Pour into the prepared baking pan and bake for 25 minutes, or until fully set. Cool before cutting into squares and store in the fridge. Enjoy!
