Nothing gets me into the holiday mood like the smell of spiced and roasted nuts. This recipe is super quick to make — literally 15 minutes. Put a bowl of these out when you have company over, take a bag of them with you for an on-the-go snack, or give it away as a healthy holiday gift, rather than sugar bombs.
8 cups Assorted Nuts
2 teaspoons vanilla extract
½ teaspoon almond extract
1 tablespoon ground cumin
1 tablespoon cinnamon
dash of sea salt
dash of nutmeg
dash of Red Pepper
2 tablespoons coconut oil
Use a large skillet to roast the nuts over medium heat. This will take about 5 minutes.
Meanwhile prepare a baking sheet by lining it with wax paper. Set aside.
Add the coconut oil and once it melts coat all of the nuts evenly.
Add the vanilla and almond extracts and the spices. Mix well and continue to roast for a few minutes. Your kitchen will start to smell heavenly at this point!
Remove the nuts from heat and spread evenly over the prepared baking sheet. Allow to cool.
