I had a bunch of fresh cherries and thought it would be fun to make Maraschino cherries without added sugar or food dyes. And then the next obvious step was to make Cherry Thumbprint Cookies...
1 tablespoon Liquid Stevia
1 cup Luxardo Maraschino Liqueur
½ cup tart cherry juice
1 vanilla bean, split and scraped
⅛ teaspoon sea salt
¼ cup amaretto liqueur
2 tablespoons lemon juice
3 cups sweet red cherries
Whisk together the stevia, Luxardo liqueur, cherry juice, vanilla bean and scraped seeds, and salt in a saucepan over medium-high heat. Bring the mixture to a boil, then reduce to a simmer for 3 minutes.
Remove the saucepan from the heat and whisk in the amaretto and lemon juice.
Put the cherries in a glass jar and pour the hot mixture over the cherries. Cool to room temperature, cover with the lid and chill. Marinate the cherries for 3-5 days for optimal flavor, and keep in the fridge for up to 6 months. Enjoy!
