When it comes to creating over-the-top-awesome recipes, I decided to take my own advice and model the success of other over-the-top-awesome recipes. It all came down to one ingredient . . . BACON!

Note: An alternative to wrapping your salmon fillets in bacon is to cook the bacon separately, chop it up, and sprinkle it over the fillets. To do so, line a rimmed baking sheet with foil and place a wire rack on top. Lay the bacon strips over the wire rack and brush them with the maple-mustard sauce. Bake at 400°F for 20 minutes, or until crispy. This sweet glazed bacon makes an awesome treat all by itself, too!


Serves 4

½ teaspoon sea salt

¼ teaspoon black pepper

½ cup plus 2 Tablespoons pure maple syrup, divided

¼ cup coconut aminos

4 (6 oz) salmon fillets

8 bacon strips

1 tablespoon dijon mustard

½ teaspoon Lemon Zest

In a small bowl, combine the garlic, salt, pepper, 1/2 cup of the maple syrup, and coconut aminos. Place the salmon in a shallow casserole pan and coat with the marinade. Cover the dish with plastic wrap and let the salmon marinate in the fridge for 30 minutes, turning once.

Preheat the broiler to high. Lightly grease a 10 × 15-inch baking dish with olive oil.

Wrap each fillet with 2 strips of bacon, securing the bacon with 2 skewers. In a small bowl, combine the remaining 2 tablespoons maple syrup, mustard, and lemon zest. Brush the mustard mixture over the bacon-wrapped fillets.

Place the bacon-wrapped fillets in the prepared baking dish and broil, watching closely. Once the bacon has crisped, about 10 minutes, adjust the oven temperature to 400°F, place the salmon on the center rack, and bake for 5–10 minutes, until cooked through and flaky.
