On a recent trip to my friend JJ Virgin's house for a fun and nutritious cooking session, she came up with the idea for bite-sized protein balls...covered in stevia sweetened chocolate! I loved the idea of on-the-go chocolate morsels that we can feel good about eating, and so this recipe was created. Give it a try to see just how tasty protein and chocolate can be...
½ cup Almond Butter
¼ teaspoon Liquid Stevia
1 teaspoon vanilla extract
½ cup Ground Chia Seeds
¼ teaspoon sea salt
1 teaspoon ground cinnamon
¼ cup sliced almonds
½ cup JJ Virgin Protein Powder
¼ cup water
5 ounces Bullet Proof Chocolate Bar
1 tablespoon coconut oil
pinch of flake sea salt
Combine all but the last 3 ingredients in a large mixing bowl. Mix until fully combined. Chill in the fridge for 15 minutes.
Form the chilled dough into 24 balls. Place on a parchment paper lined baking sheet and put in the freezer for 10 minutes.
Meanwhile, melt the chocolate and coconut oil in a double boiler. Use a slotted spoon to dip each frozen protein ball in the liquid chocolate then place back on the baking sheet. Sprinkle with flake sea salt and put back in the freezer for 10 minutes.
Keep your JJ Virgin Double Chocolate Protein Bites in the freezer to prevent the chocolate shell from melting.
