This pizza is so much fun and is perfect for a weekend brunch. It’s not a speedy recipe, you’ll need to take your time forming the dough and arranging the toppings, so save this one for leisurely Saturday morning.
The kids won’t eat this – they don’t like the egg yolk – and that’s totally fine with me because I can’t get enough of it! This homemade pizza dough is gluten and grain free, making it lower carbs than traditional pizza. Also it’s dairy free, though the egg whites may fool you into thinking there is melted cheese involved.
1 tablespoon raw honey
1 packet (2 tsp) active dry yeast
¼ cup warm water
¾ cup blanched almond flour
3 tablespoons coconut flour
½ cup arrowroot starch
¼ teaspoon sea salt
1 teaspoon dried rosemary
1 omega-3 egg
1 tablespoon olive oil
1 teaspoon apple cider vinegar
½ cup marinara sauce
6 ounces boneless ham, chopped
4 omega-3 eggs
2 cups Baby Arugula
Juice from ½ Lemon
1 tablespoon olive oil
salt and pepper to taste
Preheat oven to 425 degrees F. Lightly grease a baking sheet with olive oil.
In a small bowl combine the honey, yeast and warm water. Mix carefully with a fork. Set aside for 5 minutes, until foamy.
In a medium bowl combine the almond flour, coconut flour, arrowroot starch, salt and rosemary. Work out the lumps with a fork. Add the egg, olive oil and vinegar to the yeast mixture and mix to combine.
Add the wet ingredients to the dry ones. Mix well and form a ball of dough. Work the dough for about 30 seconds with your hands, smoothing out any lumps.
Place the dough ball in the middle of your prepared pan. Dip your fingers in olive oil, then use them to flatten the dough into a 4-leaf clover shape (see below for step-by-step pictures). Make sure to pinch the dough up around the edges. Place the dough in preheated oven for 5-7 minutes, until golden.
Spread the marinara sauce over the pizza crust. Arrange the ham piece around the perimeter of each clover leaf (see pics below) leaving the centers hollow. Crack an egg into each center.
Return pizza to the oven for 7-12 minutes, until the egg whites are set, but the yolk is still soft.
In a medium bowl mix the arugula with the lemon juice, olive oil, salt and pepper. Arrange the arugula in the center the pizza.
Slice and enjoy!
