After my dessert-making flurry last week, I’ve been taking a break from sweeteners. At least from the calorie-filled ones.
Stevia is a natural, calorie-free sweetener made from the Stevia plant. It’s a good option to have when you’re craving something sweet but don’t want the calories of other sweeteners.
These light Guilt-Free Macaroons are the perfect cookie to make on one of your lighter days
3 egg whites
¼ teaspoon cream of tartar
4 tablespoons coconut oil, melted and cooled
2 tablespoons water
½ teaspoon vanilla extract
¼ teaspoon almond extract
2 tablespoons stevia in the raw
2 cups Unsweetened Coconut Flakes
¼ cup lily’s chocolate chips (stevia sweetened)
Preheat the oven to 350 degrees F. Generously grease a baking sheet with coconut oil.
Beat the egg whites with an electric mixer with the whisk attachment until peaks begin to form.
Add the cream of tartar, coconut oil, water, vanilla and almond extracts.
Fold in the coconut flakes.
Place ¼ cup mounds of batter on the prepared baking sheet.
Bake for 15 minutes, or until golden. Sprinkle the chocolate chips on top of the warm cookies, then spread with a fork once melted.
