Grilled fruit makes a fantastic summer dessert! The natural sugars in the fruit become sweeter and caramelized, making it feel like a legitimate indulgence.
These tasty Grilled Pineapple can be grilled up either on a traditional grill outside or inside on a simple grill pan. Enjoy!
1 fresh pineapple, peeled, cored and cut into strips
2 tablespoons coconut oil
¼ cup unsweetened shredded coconut
Peel, core and cut the pineapple into strips. Insert a wooden skewer through each strip. Brush each side of the strips with a little coconut oil. Place on a preheated grill pan over medium heat. Cook each side until seared and tender (about 5 minutes per side).
Place the shredded coconut in a dry skillet. Heat over medium-low, stirring constantly, until golden. Remove from heat and sprinkle over the pineapple. Serve with Ginger Whipped Cream. Enjoy!
