I LOVE ice cream! And since yesterday was National Ice Cream Day here’s an incredible recipe for Green Pineapple Protein Ice Cream that’s easy to make, tastes amazing and HELPS you towards your fat loss results...

Serves 4

2 cups Non-Fat Plain Greek Yogurt (or dairy-free yogurt)

½ cup frozen pineapple chunks

½ vanilla bean, scraped


Directions

Divide the Greek yogurt into 2 ziplock bags and store in the freezer overnight, or for a minimum of an hour.

Remove the yogurt from the freezer and, while it's still in the bags, break into pieces. If it's really solid then place in the fridge for 10 minutes and then break it into pieces.

Add the yogurt pieces and all of the remaining ingredients into the food processor and blend until smooth and creamy.

Serve immediately! Garnish with fresh pineapple and mint leaves. Enjoy!

This ice cream is best enjoyed immediately  and not re-frozen!
