Here’s a recipe to help you use your garden’s summer bounty, or to use up all those farmers’ market treasures, for those of us who never got around to planting a garden this year. Tender green beans, plump tomatoes, fresh dill, and organic eggs come together in a savory, mouthwatering fashion in this simple dish.
Credit must go to my mother-in-law, Suzy, for this one, since this is another recipe that originated in her kitchen and has been lightened up in mine. The first time I made it I had to call her twice for her input and guidance. Our phone calls are pretty comical, neither of us being fluent in the other’s native tongue. We converse in part-English, part-Armenian, and are pretty much reliant on using gestures and context to fill in the blanks. Over the phone, though, that’s just not possible . . . I should probably set her up with a Skype account! In the meantime, I am learning how to say many ingredients in Armenian.
This dish is filled with fiber, vitamins, minerals, and protein. It’s wonderful alongside dinner, but the leftovers taste even better as the flavors mingle and marinate. You can bet that if I’m serving this for dinner, I’ll be enjoying a scoop or two of this tasty dish the next day.
1 tablespoon extra-virgin olive oil
1 yellow onion, thinly sliced into half-moons
3 cups tomato, chopped
3 eggs
2 pounds fresh green beans, trimmed and cut into 1-inch pieces
½ cup fresh dill, chopped
½ teaspoon sea salt
⅛ teaspoon black pepper
Heat the olive oil in a medium pot over low heat. Add the onion and cook for 3 minutes. Add the tomatoes and cook, stirring often, for 5 minutes. Add the green beans and enough water so that it’s not quite covering the beans. Cover the pot and cook over low heat for 25–30 minutes, stirring every 5 minutes or so.
Once the beans are tender, drain off the water. Return the pot to low heat and add the dill, salt, and pepper. Mix well, cover, and cook for 3 minutes.
Mix the eggs into the green beans and cook for 5 minutes while stirring. Remove from the heat and serve.
