Here's a recipe for green beans that is so delicious I found myself eating it right out of the skillet...lol! This is the ONLY way that I'm going to prepare fresh green beans from now on. The tender and savory bacon and mushroom make the perfect accompaniment to fresh and juicy green beans. Take yourself to flavor heaven by serving this satisfying side with your next steak dinner. Yum!
1½ pounds fresh green beans, ends trimmed
5 strips Nitrate free bacons, chopped
1 cup white mushrooms, sliced
1 shallot, minced
⅓ cup sherry vinegar (or apple cider vinegar)
1 teaspoon pure maple syrup
sea salt
Bring a large pot of water to boil. Add the green beans and blanch for 3 minutes.
In a large skillet, sauté the bacon over medium-high heat until crisp.
Add the mushrooms and shallots to the pan and cook, stirring often, until the shallots are tender.
Deglaze the pan with the vinegar, using a wooden spoon to scrape down the sides of the skillet. Cook until the vinegar has evaporated. Add the maple syrup and cook for another minute.
Toss in the green beans and season to taste with salt. Enjoy!
