Oatmeal without oats…wait, what?!?
Yep, this is what my world has come to.
The motivation behind my obsession with cooking and baking is being able to eat all of my favorite foods without any of the repercussions.
These favorites, that I grew up on, were filled with grains, gluten, refined sugar, dairy, soy, legumes and other processed stuff.
I loved those foods.
Those foods tasted really, really good.
But those foods didn’t love me back.
The grains irritated my gut and caused weight gain. The sugar messed with my complexion and added to the weight gain. The dairy, soy and legumes caused bloating and made me feel lethargic. And who even knows what the processed stuff with doing to me!
So I stopped making my morning oatmeal, doused in cow’s milk and crowned with brown sugar. And while I felt better and lost weight, part of me really missed it.
Until now.Oatmeal without oats!
Totally makes sense now, right?
This hot cereal is creamy, cinnamon-y and oh-so-yummy. Serve it with some coconut milk and crown it with coconut crystals
¼ cup raw pumpkin seeds
¼ cup Walnuts
¼ cup unsweetened, shredded coconut flakes
½ cup flax meal
1 tablespoon Chia Seeds
2 tablespoons coconut palm sugar
1 teaspoon ground cinnamon
¼ teaspoon sea salt
2 cups boiling water
In a high-speed blender, combine the pumpkin seeds, walnuts, coconut, flax, chia seeds, coconut palm sugar, cinnamon and salt. Blend until smooth.
Slowly add the boiling water to the mixture, blending until smooth.
Transfer the mixture to a saucepan and place over low heat for 10 minutes, stirring often. Garnish with chopped apples, raisins, sliced almonds and a sprinkle of cinnamon and coconut palm sugar. It’s also delicious with a splash of coconut milk. Enjoy!
