Ok, so tomorrow is Thanksgiving, and I know that I should be thinking about roasted turkey and sweet potatoes…but instead I’m making a batch of Grain-Free Gingerbread Waffles. Heehee, go figure.

Have you noticed how stores are putting out the Christmas stuff and playing those holiday tunes earlier and earlier each year? I saw Santa decorations a few weeks before Halloween this year…so it’s no wonder that it feels like tomorrow should be Christmas rather than Thanksgiving. I’m all holiday-confused now!

We always eat these gluten-free waffles on Christmas morning, after opening gifts. They are soft and spiced, the perfect thing to eat when you want to feel festive and happy. It’s a bonus that the recipe contains zero grains and zero cane sugar.

Hopefully the kids don’t get too confused when I serve them Christmas waffles the day before Thanksgiving…Give these waffles a try and let me know what you think. Enjoy!


Serves 16

1 cup blanched almond flour

1 tablespoon coconut flour

½ teaspoon ground ginger

½ teaspoon ground cinnamon

¼ teaspoon Ground Cloves

1 teaspoon baking soda

pinch of sea salt

4 eggs

2 tablespoons pure maple syrup

½ cup coconut milk, full fat

1 teaspoon vanilla extract

2 tablespoons molasses


Directions

In a medium bowl combine the almond flour, coconut flour, spices, baking soda and salt.

In another bowl beat the eggs, add the syrup, coconut milk, vanilla extract and molasses. Add the egg mixture all at once to the flour mixture. Stir just until moistened.

Cook the batter in a preheated, greased waffle maker according to the manufacturer’s directions. Serve warm with pure maple syrup. Enjoy!
