Let’s be honest. Everyone needs dessert once in a while. 

And while we’ve all been stuck at home during this quarantine, my need for dessert has gone up dramatically. 

However, just because we WANT and NEED dessert doesn’t mean that we should eat whatever sugary thing sounds delicious. It does, however, mean that we should get creative in making DELICIOUS and WHOLESOME desserts that are going to make us happy AND keep us on track with our fitness goals.

Another thing that’s been on my mind in light of COVID19 ​is keeping my immune system strong. I don’t want to get sick, and I know you don’t either. 

One of the best ways to fight off infection is to eat a diet that is high in the vitamins and minerals found in greens and veggies. While eating fresh produce is always the best, I have also been adding TRULEAN Ageless Super Greens to many of my new recipes to give them an immune-boosting edge.

And that’s how you eat your dessert, stay on track with your fitness goals, and boost your immune system too! 


Serves 20

1 cup mixed nuts

¼ cup coconut oil

6 Dates, soaked in hot water for 3 mins

¼ teaspoon sea salt

¼ cup Unsweetened Cacao Powder

Liquid Stevia​ to taste

2 tablespoons Raw Pecans, chopped

2 tablespoons lily’s chocolate chips (stevia sweetened)


Directions

Toast the nuts in a dry skillet over medium heat until golden.

Transfer the nuts to a food processor and blend until creamy. Add the coconut oil, dates and sea salt and blend until creamy.

Add the cocoa powder, protein powder and powdered greens and pulse to combine. Taste for sweetness, adding a few drops of liquid stevia as needed.

Transfer the fudge to a loaf pan lined with parchment paper. Smooth out the fudge in the pan and sprinkle with chopped pecans and lily’s chips, pressing lightly into the fudge. Transfer to the freezer for 30 minutes.

Once hardened, remove from the freezer and cut into squares. Keep extras in an air tight container in the fridge or freezer. Enjoy!
