It makes me cringe to think of how many highly-nutritious bunches of beet greens get thrown away every day. Not only are these greens awesome for you, they also taste great.
1 bunch beet greens, chopped
1 teaspoon olive oil
1 clove Garlic, minced
1 teaspoon lemon juice
sea salt and black pepper
Bring a medium pot of water to boil. Add the chopped beet greens. After 2 minutes, remove drain the pot and immediately dunk the greens in a bowl of ice water.
Place the olive oil in a skillet over medium heat. Add the beet greens and garlic. Sauté for 4 minutes, until tender. Drizzle with lemon juice and season with sea salt and black pepper. Enjoy!
