1 teaspoon unsweetened cocoa powder
½ teaspoon baking powder
1 tablespoon coconut flour
1 egg
1 tablespoon granular Swerve
¼ cup unsweetened almond milk
pinch sea salt
1 tablespoon Lily’s stevia-sweetened chocolate chips
Lightly grease the inside of a large, microwave-safe mug with coconut oil. Mix all of the ingredients, except the chocolate chips in a small bowl until smooth. Drop the chocolate chips into the bottom of the mug, then top with the cake batter.
Microwave for 1 minute. Check for doneness. If it looks liquid then microwave for 15 additional seconds. Turn the cake out onto a small plate. Top with some confectioners swerve and enjoy immediately!
Don’t try this recipe with vegan protein - it simply doesn’t turn out the same! The vegan protein absorbs more liquid and so the consistency will be off!
