Serves 1
For the Mug Cake

½ teaspoon baking powder

1 tablespoon coconut flour

1 tablespoon granular Swerve

¼ cup unsweetened almond milk

1 egg

pinch of sea salt

⅛ teaspoon cream of tartar (optional)

For the Protein Frosting

2 tablespoons confectioners swerve

1 tablespoon cream cheese, softened

1 teaspoon unsweetened almond milk

For the Fruit Topping (Optional)

1 strawberry

3 raspberries

4 blueberries

1 slice of kiwi

1 slice of mango


Lightly grease the inside of a large, microwave-safe mug with coconut oil. Add all of the mug cake ingredients and mix well.


Microwave for 1 minute. Check for doneness. If it looks liquid then microwave for 15 additional seconds. Turn the cake out onto a small plate.


In a small bowl, combine the frosting ingredients. Mix until creamy. Spread over the cake and top with the fresh fruit. Enjoy immediately!
