So I’m not big on Halloween…never have been. Not even back with October was officially candy corn eating month for me.
When my 1st grade teacher told the class to draw a picture of a witch I couldn’t bring myself to do it, and instead drew a princess in a pink gown. What can I say? I’d take cute and cuddly over spooky and creepy any day.
When it comes to making Halloween themed treats with my kids, they get a good chuckle over my cutesy versions of ghosts and jack-o-lanterns
1 can (13.66oz) coconut milk, full fat
4 kiwis, peeled and chopped
dash of sea salt
¼ teaspoon vanilla extract
1 tablespoon spirulina powder
½ cup Chia Seeds
½ cup mini dairy-free soy-free chocolate chips
In a high speed blender combine the coconut milk, kiwis, salt, vanilla extract and spirulina powder. Blend until smooth and uniformly green.
Pour the blender contents into a medium size bowl. Add the chia seeds, mix well and set aside for 30 minutes.
Meanwhile, use a permanent black marker to draw Frankenstein faces on 6 clear plastic cups.
Divide the green pudding between the 6 cups then sprinkle the tops with mini chocolate chips. Enjoy!
