4 cups green beans, trimmed
1 pink lady apple
1 tablespoon shallot, finely chopped
1 tablespoon fresh thyme
3 tablespoons olive oil
1 tablespoon lemon juice
¼ teaspoon sea salt
1 tablespoon raw honey
1 tablespoon fresh ginger, minced
Bring a large pot of water to boil. Add the trimmed green beans for 4 minutes, then plunge into a bowl of ice water. Drain and place the beans in a large bowl with the apple, shallot and thyme.
Combine the dressing ingredients and pour over the green bean ingredients. Toss and serve. Enjoy!
