Are you ready to take healthy eating by storm in 2018? I sure am :) Let’s do it together...

Now that the holidays are over and all those tasty sweets are ​long gone, it’s time to dig in to healthy, light, sugar free foods. 

Inspired by a Starbucks menu item, my version of Egg White Bites is dairy-free and every bit as delicious. I find that starting my day with a healthy, light bite is one of the best ways to set myself up for healthy eating all day long. These Egg White Bites are my current choice for morning healthy eating. 


Serves 16

8 egg whites

¼ cup coconut cream

¼ cup nutritional yeast

¼ teaspoon sea salt

½ cup roasted red bell pepper, chopped

1 teaspoon coconut flour

¼ cup fresh spinach, chopped

2 tablespoons fresh scallions, minced

Preheat the oven to 375 degrees F. Line 16 mini muffin tins with paper liners.

In a large bowl whisk the egg whites, coconut cream, nutritional yeast and sea salt. Add in the remaining ingredients and mix until well combined.

Evenly fill each of the 16 mini muffin tins with the egg white mixture. Bake in the pre- heated oven for 15 minutes, until set.


Quick Tip

Try these variations of egg muffins:

Taco Muffins:​ Combine 1⁄2 lb of taco-spiced browned, ground beef with 6 eggs, and a handful of chopped scallions, olives and tomatoes. Season with salt and pepper. Fill 6 muffin tins. Bake at 350 degrees F for 20-22 minutes and then top with sliced avocado and fresh salsa.

BLT Muffins:​ Combine 2 strips of crumbled, cooked bacon with 1 chopped and sautéed leek, 1 chopped tomato, and 6 eggs. Season with salt and pepper. Fill 6 muffin tins. Bake at 350 degrees F for 20-22 minutes.

Apple Fritter Muffins:​ Sauté 2 chopped apples in a Tablespoon of coconut oil with a small handful of raisins and chopped pecans. Generously season with ground cinnamon and a drizzle of maple syrup. Combine the apple mixture with 9 eggs, 3 Tablespoons coconut milk, 1 1⁄2 Tablespoons coconut flour and 1⁄2 teaspoon baking soda. Season with salt. Fill 12 muffin tins and bake at 350 degrees for 35 minutes.
