Here’s a delightful combination of tender green beans, ripe plumbs, savory quinoa and protein-rich egg. This delicious salad makes a wonderful light lunch or dinner - and is a great way to use garden fresh green beans!
1 cup cooked quinoa
2 cups green beans, trimmed, halved and steamed
1 plumb, pitted and thinly sliced
2 Hard Boiled Eggs, sliced
2 teaspoons sesame oil
2 tablespoons lime juice
½ teaspoon sea salt
pinch of black pepper
Combine the quinoa, beans, plum and egg in a large bowl.
Drizzle with the sesame oil, lime juice, salt and pepper. Mix well and enjoy!
