These muffins are hiding nutritious and fiber-filled zucchini in their chocolaty depths. What a delightful secret! The best part is that most people don’t even notice the little specs of veggie—children and adults alike.


Serves 16

⅓ cup unsweetened chocolate pieces

½ cup raw honey

½ cup coconut oil

¼ cup coconut cream

3 eggs

1 teaspoon vanilla extract

2 cups blanched almond flour

¼ cup unsweetened cocoa powder

1 teaspoon baking soda

1 teaspoon sea salt

1 teaspoon ground cinnamon

2 cups grated zucchini, drained

¾ cup lily’s chocolate chips (stevia sweetened)


Directions

Preheat the oven to 350°F. Line 16 muffin cups with paper liners. Set aside.

In a lazy man’s double boiler, combine the chocolate pieces, honey, oil, and cream. Stir often until smooth. Remove from the heat and let cool.

In a large bowl, combine the eggs, vanilla, and melted chocolate mixture and mix well.

In a separate bowl, combine the our, cocoa powder, baking soda, sea salt, and cinnamon. Add the wet ingredients and mix until fully combined. Fold in the grated zucchini and chocolate chips.

Fill the muffin cups and bake for 20 minutes, until set.
