Breakfast is the best meal of the day for the simple reason that you could get away with something completely savory or something completely sweet. Or you could have a little bit of each!

I haven’t yet met a breakfast recipe that I didn’t love. The challenge of taking a traditional grain and sugar filled recipe and creating the same dish without the harmful ingredients is so much fun.

Take these Chocolate Waffles (no you can’t actually take these ones. These ones are mine – go make your own!) I’ve put together this recipe without using grains, refined sugars or dairy — 3 things that most traditional waffle recipes have. The end result is oh-so delicious and sinfully decadent, without compromising your eating habits.

This wholesome breakfast that could pass as dessert!  If you love chocolate, then this will be your new favorite indulgence. And if you don’t love chocolate then please check your pulse!!! Enjoy


Serves 16

1 cup blanched almond flour

1 tablespoon coconut flour

⅓ cup Unsweetened Cacao Powder

1 teaspoon baking soda

pinch of sea salt

4 eggs

½ cup pure maple syrup

½ cup coconut milk, canned and full-fat

1 teaspoon vanilla extract

¼ cup mini dairy-free soy-free chocolate chips


Directions

In a medium bowl combine the almond flour, coconut flour, cocoa powder, baking soda and salt.

In another bowl, beat the eggs, add the syrup, milk and vanilla extract. Add the egg mixture all at once to the flour mixture. Stir just until moistened. Fold in the chocolate chips.

Cook the batter in a preheated, greased waffle maker according to the manufacture’s directions. Server warm with pure maple syrup.
